Roast chicken & cabbage ballotin, roast rosemary potatoes
Kiki went to market....and bought a huge romanesco broccoli head & an even bigger cabbage #huge 😝
Which means i have plenty of it to make lots of recipes! Super greens soup was an easy pick but i still have almost all of it to make more delicious foods with...Bring it on!
So tonights dinner is a chicken breast stuffed with cabbage and cherry tomatoes i had left over, rolled into a ballotin (or parcel) served with roast new potatoes.
1 chicken breast, butterflied and battered thin (this will help with the rolling)
4 cherry tomatoes, halved
Salt & pepper for seasoning
1 tsp olive oil
1 sprig of rosemary
6 new potatoes cut in half
Start by butterflying the chicken. On a pan of hot boiling water, boil 2 leaves of cabbage (for 3-5 minutes, they want to still have a 'bite' and not be too floppy).
Drain and set aside. Place the cabbage leaves on top of the chicken breast, half the cherry tomatoes, season and start rolling.
In a lined baking tray, place your ballotin.
Personally, to fast track the potatoes, i would microwave them for around 5 minutes until cooked.
Once cooked, half them and place them on the baking tray with rosemary & a clove of garlic.
Cook with the chicken for 30 min until chicken is cooked and the potatoes golden.
Adjust seasoning and serve.
