Chicken with chestnut, spinach & parmesan salad

Chestnuts are a favourite of mine, especially in autumn.
They are sweet and when roasted, their aroma really comes through.
Great source of carbs, minerals & vitamins.
Yes they have some fat 1.3g per 100g but this is negligible and it's a great substitute for a more starchy carbs. 


If you don't like chestnuts you can roast 50g of hazelnuts instead! 


INGREDIENTS
1 chicken Breast
50g spinach
10ml olive oil
10g parmesan shavings
100g chestnuts
salt & pepper

Roast or Pan fry the chicken breast. 

In a bowl, mix chestnuts & spinach and dress with a teaspoon of olive oil, salt and pepper.
When the chicken is ready, place on plate with the salad & finish with parmesan shavings
