Roma & Sourdough bruschetta
This is a staple on Italian tables. Bruschetta is one those quintessential Italian classics that are super easy to make, great as a starter or canape and on its own.
On days like today it's ever-the-more perfect quick lunch solution to waste no time in the kitchen and get out there basking in the sunshine.
When you also find a bounty of sweet as cherry tomatoes and unbelievable sourdough bread than i think it's almost a must.
MARKET BOUNTY INGREDIENTS
10 Roma cherry tomatoes
1 thick cut slice of sourdough, to chargrill
1 clove of garlic
Glug of Extra Virgin olive oil
Salt & pepper to taste
4 basil leaves
Splash of balsamic vinegar
Parmesan shavings (up to you, they are super easy to make: use a potato peeler to get some lovely little ribbons) (You can also use buffalo mozzarella, torn up, so soft & milky)
Cut your cherry toms in half and place them in a bowl. Chop your garlic or slice it in flakes. Add it to the bowl of tomatoes alongside olive oil, vinegar & seasoning as well as the basil leaves. Mix together. Set aside for a couple of minutes.
If you don't have a char grill, simply heat up a frying pan. Sprinkle your bread with olive oil on both sides then pass it on the hot pan to get a char on each side (literally 2 minutes).
Place your grilled-to-perfection slice of bread on a plate, then arrange your tomatoes on top and finish with the parmigiano or mozzarella or both :-)
