BARLEY risotto with chicken, mushroom & parmesan

BARLEY MUSHROOM RISOTTO, PANFRIED CHICKEN FILLETS & PARMESAN

50GR UNCOOKED BARLEY (will yield 100g cooked)
100G Chicken fillets
100g exotic mushrooms of choice (i have oysters, chanterelles, enoki, king oyster)
80g onion
1 spoon olive oil
5g parmesan shavings
5g chopped parsley

🐣Cooked the chicken in a pan with fry oil for 20 minutes (until cooked- not pink in the middle), set aside.
🍚Barley if you use the 10 min quick cook it will save you 1 hour - however if you use the dry barley it will need cooking for 1 hour in salted boiling water. Set aside.
🍄in a frying pan, add i spoon of olive oil (extra virgin), 1 clove of garlic and your shrooms. Cook until soft (5min depending on size).
🍛now let's combine everything together, to the mushroom pan, add barley, chicken and parsley. Mix well. Place in a bowl, finish with parmesan :-)

A NOTE: If you are plant-based 🌿 You can substitute parmesan for vegan cheese, add tofu instead chicken or enjoy on its own too (v)

🍚BARLEY is an excellent substitute to rice. Great in cold salad, easy to bulk. Also you could make a mushroom barley soup too and add chicken at the end.

🍄MUSHROOMS again incredibly versatile, each with a slight different nutty taste. Use them in omelette, soups, with your poached eggs in the morning as sides. Macro friendly, tasty & make a pretty lush side to steak too

💪This recipe using the quick cook barley takes 30min, can be bulked for prep & it's damn tasty too :-)
