Soy ginger marinated chicken with Asian greens
1 chicken breast, cube this
1 pak choi
1 choi sum
50ml light soy sauce
1/2 chilli (keep a few slices to add on top at the end)
5cm ginger, sliced
1 garlic clove (or tsp of already grated)
100g rice noodles (thin or thick your choice)
1 tsp sesame oil
1 spring onion for decoration (adds crunch too)
Sesame seeds (black)
Step one microwave, yes microwave your greens.
Chop chilli, garlic, ginger add to a frying pan with fry oil, then add cubed chicken and cook for 10 minutes stirring often. Add more fry oil as needed.
In the meantime boil a pan of water, salt and add noodles when it boils. Cook, drain set aside.
Remove all veggies from microwave, chop smaller.
Add to chicken the soy and let it cook down. Add tsp of sesame oil.
Let marinate for a further 5 minutes.
On a plate, place your noodles, vegetables as a bed then pour over chicken.
Finish with fresh chillies and spring onion + sesame seeds. EAT IT ALL <3
