2 Egg Courgette Frittata, feta & cress
This is super easy, breakfast or lunch or dinner really up to you.
You will need a frying pan. One pan type of dish
2 eggs per person
200g courgette sliced
half a chili
small clove of garlic
salt and pepper
30g of feta per person
baby cress for garnish
Beat your eggs in a bowl. Slice your courgette, garlic, chili and season with salt and pepper.
Start by cooking your courgette mix without the egg. Around 10minutes. Use the spray oil to start them off, around two minutes before end of cooking add a splash of water.
When the courgettes are done add your beaten egg and cook on low to medium heat.
Turn once the egg has settled on one side.
Serve with crumbled feta and cress to garnish
