Plant-based pea & avocado gnocchi, green beans, pea shoots, edamame & pine nuts
serves 2 people
250g gnocchi per person (500g)
100g green beans
20g pea shoots
1 tbs extra virgin olive oil
salt & pepper
Microwave your peas in water for four minutes. Drain, set aside. Half an avocado, scoop its flesh out and place in a blender with the olive oil, peas and season. Whizz up to obtain a creamy puree.
Microwave your green beans for 4 minutes. Allow to cool.
In salted boiling water, add your gnocchi. They are ready when they surface to the top.
Pan-fry your pinenuts until lightly coloured.
Mix gnocchi with puree, dress with edamame, pea shoots & green beans.
This dish is a great balance of plant based proteins (peas 5g per 100g), edamame (soy beans)(11g per 100g), fats in avocado which also give the dish a creamy texture. Potato gnocchi for carbs & voila! Good food that tastes great, in season & super colourful too :-)
