Lamb meatballs with chickpeas, cherry tomatoes & spinach stewtkcp
12 lamb meatballs
150g cherry tomatoes
240g chickpeas (canned)
Cook the meatballs in a frying pan with spray oil.
Add the cherry tomatoes to the pan and cook for 10 minutes - you can half the cherry tomatoes if you prefer.
In the meantime, drain the can of chickpeas into a microwavable container, add the spinach and cover with water. Cook in microwave for one and a half minutes, then stir. Cook for a further 2 minutes.
Drain the chickpeas & spinach, then add to the meat balls pan.
Serve as a standalone dish, 4 meatballs per person
