Black bean spaghetti, queeny scallops, cherry tomatoes

Think this is going to be a new favourite! Absolutely loved making this, hits the right spot, feels lush without a ton of calories and all the benefits of its macronutrients

Black bean spaghetti, queeny scallops, cherry tomatoes

INGREDIENTS (per person * i used all the scallops in the pack to hit my macros, a portion would equate to half a container )

50g Black bean spaghetti
10 cherry tomatoes
1/2 a clove of garlic
1 tsp extra virgin olive oil
150g raw patagonian scallops

Cook the black beans spaghetti in salted boiling water, 4-6 minutes. Drain, set aside.
In a hot pan put half a garlic clove, olive oil & throw in the cherry tomatoes.
Cook for around 5 minutes, set aside.
In the same pan, quickly fry off the queenies, literally 2 minutes. Scallops are very delicate, too long, they will be tough as hell, too little they would be raw.

Assemble and serve. Absolutely delicious.
