Gnocchetti sardi, broccoli, green beans & tuna

This is such a simple recipe. That’s exactly what i am about. I love good honest food i can enjoy as well as nourish myself for a workout and activities of the day ahead.
- You can easily make more than one portion
- You can play with the ingredients almost endlessly
- You can enjoy with friends and family whilst having the best healthy meal

It also reminds me of home so for me it’s a win on so many levels

You will need

50g Gnocchetti sardi pasta (or any short pasta you enjoy)
1 tin of tuna (in water or brine up to you)
100g broccoli florettes
50g green beans
1 tsp olive oil
1 squeeze of lemon
salt & pepper

Cook your pasta in salted boiling water (you do need to put salt in the water, this is my culture lol we are making pasta right). Cook for 10 min for aldente (*has a bite);
In the microwave, blanch your vegetables in two separate containers or those super useful microwave bags. I usually cook them for 4.5 min each. Cooking time will much depend on your microwave power.
Open the tin of tuna, drain the water.
Drain the pasta, add your vegetables & tuna, mix together with lemon oil. Finish with black pepper!
Boom! Food is served.

Tuna, broccoli & green beans really suit a touch of chilli too if you fancy an extra kick to the dish
