Gnocchi Family Bake: spinach, 'bolognese', cheesy top
500g 5% lean beef mince
1/2 white onion
1/2 garlic clove, crushed
50g grated parmesan
50gr cheddar (ricotta for a virtuous topping)
black pepper & salt to season
200g wilted spinach
1/2 tun tomato puree
You will need a frying pan, a deep pan, baking pot.
Pre-heated oven at 180C
For the ‘bolognese’
Chop onion & crush garlic. Sautee in a lightly oil pan to soften the onion until translucent.
Add mince and cook down (around 10min) to brown off the meat. Add puree mix in well and cook for a further 10 minutes. Add spinach wilt them down, remove from heat and set aside.
In a pan of boiling water, salted, add your gnocchi. They will be ready when the gnocchi come on top. Drain in a colander.
In the baking tray, add a layer of mince at the bottom. Gnocchi on top mix together to bind. Add the rest of the mince mix, top with cheese and 25g of parmesan. Bake for 20 min until cheese is grilled on the top.
