Summer Vibe Prawn, Carrot ribbon, watercress, orange mustard dressing salad
a white fish, chicken and halloumi would go really well with the salad base

INGREDIENTS (serves 2)
150g cooked prawns
2 carrots (ribbon with a potato peeler)
2 oranges (segment & keep the juice in a bowl)
100g Watercress
1.5 teaspoon wholegrain mustard
1 teaspoon honey
1 teaspoon apple cider vinegar
1 teaspoon extra virgin olive oil

Simple, super fresh summer salad that you can accompany with any protein of choice.
Using fruit & vegetables to get your five a day variety plus a wealth of minerals and vitamins + taste.

  • Oranges fiber, potassium, vitamin C and choline. Oranges also contain thiamin, riboflavin, niacin, vitamin B-6, folate, pantothenic acid, phosphorus, magnesium, manganese, selenium and copper.   • Carrots rich in beta carotene (converted in vitamin A), fiber, vitamin K1, potassium, and antioxidants. All round beneficial root vegetables, full of taste.

    METHOD

    Segment you oranges, keeping the juice in a small bowl to use for the dressing.
    Ribbon your carrots using a potato peeler, set aside to dress later.
    Wash watercress and drain well.
    Bring prawns to room temperature, season set aside until you assemble the salad.
    in the bowl with the juice of the oranges, add you mustard, oil, vinegar & honey.
    Mix well and voila all ready to dress your salad & plate.
    Add coarse black pepper for extra heat & enjoy.
